1 cup peanut or almond butter
1 cup vegan chocolate chips 
1/4 cup roughly cho

Nutty Fudge Cups 💞 1 cup peanut or almond butter 1 cup vegan chocolate chips 1/4 cup roughly chopped peanuts or almonds 1/4 cup roughly chopped raisins or dried cranberries 1. Use the double boiler method and melt chocolate chips and nut-butter. Stir until combined. 2. Mix in chopped nuts and dried fruit. 3. Pour evenly into 12 cupcake liners and place in freezer for at least one hour or until frozen. 4. Optional: Before freezing, top with extra chopped nuts and a drizzle of melted chocolate chips for decoration. Enjoy!!

Health, Environment, and Animals. I like to talk about all of the benefits of living a vegan lifestyle because they are all very important to me. I used to be different. I used to struggle with weight, skin, and anxiety. I have had friends and family members develop, struggle with, and even pass away from diseases that can be prevented with proper diet. Health is also not to be measured from mere physical appearance. We cannot see our arteries through our skin, physically fit people still get diagnosed with disease everyday. What we put in our bodies is much more than how our bodies look on the outside. It’s the microscopic components running through our veins, either feeding our cells or poisoning them slowly. There are many factors that contribute to disease. (Dis-ease). And some of them are arguably genetic. But did you ever stop and wonder, maybe our inherited eating habits may be playing a major role in the problem? 🤔 One of my favorite things to share with you guys are recipes and meal ideas because I want to show you how delicious, simple, and satisfying a plant-based diet can be. I can honestly 1,000% tell you that I do not miss a single thing and do not feel “restricted” in any way shape or form. My health is worth it, the Earth is worth it, and the animals are without a doubt, worth it. 🌱🌱🌱

How we treat the most vulnerable says a lot about us. I always think it’s so backwards how people or men in particular think it’s “manly” to eat meat... taking a life of an animal who would never hurt you, would probably trust you, and you don’t need to hurt is just so... weird. Manly is not the word that comes to mind. I believe that most of us love animals naturally. We love the real life animals that we get to see face to face... for example our pets, wildlife we see in our backyards or out on trails, we are fascinated with them and we adore them. But when we grow up eating them we become disenchanted with the ones we put on our plates. They are no longer pigs, “it’s” bacon and no longer is chicken a bird, “it’s” wings. Some animals become our family members and others become “things.” They are not thought of at all, they don’t matter to us because we can’t think of them as individuals while eating them and sleep at night. But why do their lives matter less than your family dog or cat? When I was a small child, my dad gave me a chicken as a pet. I named her Feather. She was a black bird who had shades of blue in her feathers in direct sunlight. She loved to be pet, held, and almost purred like a cat. I loved her. One day I came home from school and Feather was nowhere to be found. After a few days and no sight of Feather, My dad joked that he served her for dinner, and the thought made me sick. I didn’t become vegetarian for many years after. I never really thought much about Feather until recently. Why would only eating “Feather” disturb me but I continued to eat “chicken” anyways? Because we are so conditioned to disassociate animals from food. We don’t see them alive, pet them, look them in the eyes. Dead flesh wrapped in plastic is as close as we will ever get to them. One day I understood that every animal, not just the ones we get to meet, feel pain and joy, and deserve to live their lives fully and without manipulation just as we do. We are not a superior species greater than the rest. We do not matter more. We all inhabit this Earth together. We are equal. And it’s about time we start treating all of Earth’s animals that way.

Who’s resolutions are going to include eating more veggies? 🙋🏼‍♀️🥦🌱 Meeee!! How about you? I feel like documentaries are a great way to get inspired and motivated. My personal favorites on Netflix right now are What The Health, Forks Over Knives, and Cowspiracy. Not only do documentaries inspire, but people do, too. Wether they are physically in your life or not, wether you know it or not, you inspire others around you. Taking control of your own health is wonderful because it makes you look and feel good, but it also benefits everyone else in your life who loves you, depends on you, and needs you. What greater gift can you give yourself and your loved ones than a healthy, self-empowered better version of you? Be someone to inspire, to motivate, and encourage others to live their healthiest lives in 2018.
